
These are a great source of protein and fiber, but what's more, they're actually tasty! So if you're looking for a quick pick-me-up snack that's healthy and delicious, and you hate to spend money on the store bought bars, try these instead!
Chocolate Peanut Butter Bars
1 cup rolled oats
1/2 cup oat bran
1/2 cup wheat germ
1/2 cup vanilla whey protein powder
1/2 cup nonfat dry milk powder
3/4 cup peanut butter
1 cup light corn syrup
1 cup semi-sweet chocolate chips
Place dry ingredients in large food processor. Pulse for 5 seconds. Add peanut butter. Pulse. Add corn syrup and blend to a thick, moldable texture. Stir in chocolate chips. Press in a cookie sheet to 1/4 inch, then cut into bar shapes with pizza cutter. Freeze and then store in saran wrap or baggies until ready to eat. Also good if eaten defrosted.
Substitutions: If you want to make these with stuff you already have, substitute another cup of finely processed oats for the oat brand and wheat germ. Substitute an equal amount of additional powdered milk for the protein powder. Add finely chopped nuts or fruit and omit chocolate, if desired.
Here's a lower fat power bar I adapted from the one above. It's nice and chewy and does not need to be frozen.
Apple Cinnamon Raisin Bars
1 cup rolled oats
1/2 cup walnuts
1/2 cup nonfat dry milk powder
1/2 cup vanilla whey protein powder
2 Tbsp. ground flaxseed
1/2 cup oat bran
1/2 cup wheat germ
3 packets apple cider drink mix
1 tsp cinnamon
1/2 cup light corn syrup
1/2 cup honey
1 Tbsp water
1/2 cup golden raisins
Process the dry ingredients first, then add the corn syrup, honey, water, process till thick and somewhat smooth, then stir in the raisins. Press in cookie sheet to 1/4 inch. (I like to roll these with a small rolling pin.) Cut into bars and wrap with saran wrap. Great for a snack between meals or for when you are going to miss a meal.
The same substitutions may apply to these as the chocolate peanut butter bars.
Note: Be sure to drink plenty of water with these as they have so much protein and fiber. Enjoy!

those look SOO Good! I can't wait to try them! Here's a good memory (besides the ones you mentioned): when we rode with Shelly to the women's conference and when we had the girl's night out and saw "The Devil Wears Prada." You are always so fun to talk to, and I miss you! I'm glad we can keep in touch through our blogs!
