Joshie's preschool celebrated their final class session with a favorite story of Joshie's and a treat he's been dying to try since we found the book: Mud Soup. It's a really cute story that introduces an authentic and simple Mexican dish in a playful way. At the end, there's a recipe, but we kind of experimented with ours just for fun. The kids dove in with enthusiasm at the novelty of eating "mud" but they kept eating it for the taste. It was full of flavor but, surprisingly, not spicy. As the book says, "Delicioso!"Here's how we made it:
Mud Soup
3 cans black beans
1 small onion
2 stalks celery
1 c salsa
1/2 c salsa verde
1 tbsp cumin
2 c chicken broth
1 tsp salt
1 sm can tomato sauce
Possible toppings: tomatoes, corn, cheese, sour cream, rice, chives, corn chips.
Puree all ingredients in blender or food processor. Simmer for an hour, for fifteen minutes, or for however much time you feel good about. Serve topped with your choice of toppings (see above for suggestion), or anything else you'd like!

Sounds yummy! I know Sofia sure does miss the preschool class! She really wanted to keep going, but it was to hard with the 1 1/2 hour drive to get there.
